Earl Grey Scone
When you wake up in the morning and find out that your breakfast bread is out, what would you make for breakfast? I tend to make Scone and, put a twist to it every time I make them. It takes a little bit of time,but it worth it.I love scone that has crusty outside,flaky inside. I don't like overly sweet scones.
Originally,I tried many kinds of scone recipes trying to recreate the scone from my favorite coffee shop Starbacks.Their scone has crusty outside,flaky inside and,it really tastes good. Over the course of experimenting all kinds of recipes,I found out some key points to make a real good scone.
Earl Grey Scone with white Chocolate Amaretto Icing
My husband loves it, his workmates loves it,and needless to say,my stumpy little Corgi Miss Palette loves to give you cute puppy eye hoping to get a score. Even if she was napping under the bed, once she hears you pick up my scone,then,you would expect to find her right behind you in a second. She is pretty fast on her feet when it comes to food.
Key #1:Bake the scone with high heat (425F to 450F)
-This makes crusty outside
Key #2: Use very cold stick of butter(This goes same to making pie crust or biscuits)
-This makes inside of the scone flaky
Key #3: Use hands to mix the dough
- This avoid over-mixing the dough. If you over-mix the dough,you would end up doughy scone
Key #4: Don't place scones close each other on cookie sheet.Need space between each scones.
-If scones were close each other,you would end up with not so crusty outside scone
Key #5: Use 50% bread flour,50% unbleached all purpose flour.
-This is just my preference. For scones,bread,pizza,I use 50% bread flour -50% unbleached all purpose flour flour. It just taste better.
Here is how you make Earl Grey Scone
1. Find your favorite Plain scone recipe
2. Mix dry ingredients in one bowl and put tea leaves from a couple of Earl Grey tea bags. 1-2 Earl Grey tea bags per cup of flour used would be enough. For me,right amount of sugar is 1/4 cup of sugar per 1.5-2 cups of flour used in the recipe.
3. Put cold cut in butter to the dry ingredients and work with hands till the butter becomes pebble size
4.Then add liquid to the dry ingredients,mix well.
5.When dough is formed,put the ball of dough onto floured board, knead a little and roll out to rectangle shape. Then cut to triangle shape. Place them on cookie sheet try not to place them close each other.
6. I have tried egg wash,milk,heavy cream to glaze on top in the past but I find simple milk on top of dough works better for me. Then, I like to sprinkle raw sugar on top of the scone dough. My favorite raw sugar is "Sugar in the raw".
7.Bake them as your recipe suggests
If you have one plain scone recipe you really like,you can make it in thousands of ways. I have made ginger scone by putting chopped up crystallized ginger in the mix. I have made fruits scone by mixing chopped dry fruits such as dry peach,dry mango,dry apricot.. Those are good,but best Scone flavor I love is Earl Grey Scone.
When I make scone, I leave half without icing,half with icing.Then,I have fun coming up with all kinds of icing. Recent icing I used for scone was with White chocolate Amaretto icing.
It is easy. Just melt white chocolate,drop some Amaretto to the melted chocolate, and if necessary,add powder sugar to tighten up the icing. You can make it with Rum etc as well. If you had left over,simply pour it to small tapper wear and you can keep refrigerated.Then,when you needed,microwave them about 10-12 seconds. If it didn't soften up the icing,you can do microwave a little,mixing,microwave and mixing. Using double boiler to melt the chocolate is better to make this icing. High heat makes chocolate melt but it makes grainy texture.Using double boiler with gentle heat makes chocolate melt smooth.
If you like crusty outside for scone like me,don't cover the scone when you cooling them off. Covering keeps moisture trap and makes soft outside scone.
And,if you had leftover scone,freeze them. You don't need to thaw them in fridge before eating,you can toast them or microwave them about 12-15 seconds. Top microwave the scone, leftover pizza,donut,leftover garlic knots etc, I cover them with paper towel gently. It creates steaming and heat seems to be evenly distributed. Only drawback doing this for scone is that you loose the crusty texture.
By the way,don't give your dogs chocolate. It is Toxic for them. You can read more on Chocolate and dogs here..
