Japanese cooking: Tori niku no Karaage (Deep fried chicken)
Everybody including kids love fried chicken. Crispy outside,tender inside,very moist flavorful chicken is always tasty. Japan has fried chicken, but it is a little different look and with different flavor. I make them now and then,and it makes my husband and his workmates go "Hmmm.Gooood!".
So,what is the difference? For starter,we marinade chicken in sort of like Teriyaki seasoning mixture if you will. Very easy,flavorful,it sure would make your family go nuts about them. I am sure little furry friends would stare straight with cute puppy eyes even though they know they are not going to get them.
Here is how you make it.
1> Pick up chicken boneless thigh meat or breast meat,and cut to cube.
2>To a bowl,add 1tbs soy sauce,1/2 tbs sake, pinch of table salt,grated ginger(you need to peel the skin),and splash of sesame oil, 1 stalk of green onion roughly chopped, and mix well. To the bowl,add chopped chicken
3> Marinade 15-20 min.Then, dip chicken to beaten egg,roll onto potato starch, and deep fry till golden.
4> Once you take chicken out from oil,immediately sprinkle kosher salt with black pepper
** If you had leftover Wantan wrappers,you can cut to strips,deep fry them till golden and sprinkle kosher salt when they come out from oil Deep fried Wantan wrapper is very good.Kind of like potato chips but tastes different.
**I would recommend to buy sake with green colored bottle made by Gekkeikan. It is my choice for for sake in cooking.
** Some of Japanese fried chicken comes with sauce mixed in. My favorite sauce is this sweet sour sauce. Dipping piping hot fried chicken to this sauce and eat them tastes real good.
Here is how you make it.
1>Mix grated ginger,chopped green onion,1.5tbs soy sauce, 1 tbs rice vinegar,1 tbs white sugar,1/2tbs sake,splash of sesame oil in sauce pan and heat up to dissolve sugar in the sauce,and voilĂ ,you made sweet sour sauce to go with fried chicken. If you like thickened sauce,you can always add cornstarch+water and bring it to boil. It will thicken the sauce. If you make it as meal, then,you can add vegetables in it. You can change protein to pork etc too.
