Chinese/Japanese cooking: Double Pork Asian BBQ Fried Rice
In the previous entry titled "Chinese/Japanese cooking; Fried rice,Omelet and Rice,Chicken rice, and rice pancake ", I wrote that Fried rice is one of the quick and easy dishes and you will be able to come up with thousands of ways to make it.
Recently, I have made Pork tenderloin with vegetable in ginger garlic sauce. My husband is not a big fan of Pork, but he really liked them, and I had some ginger garlic sauce left.
Looking at the leftover sauce, which I did not use in the dish,I thought,I would use the sauce for the fried rice next day. Then, I came up with the idea for "Double Pork Asian BBQ Fried Rice".
The dish came out real good,and my husband has already asked me to make it again, and if I knew it will be a big hit,I would have taken a picture of the dish then. I will add a picture next time as update later.
So, how do you make Double Pork Asian BBQ Fried Rice? Here is how.
<How to make ginger garlic sauce>
1. To the sauce pan, add 1/4C soy sauce, 2 tbs white table sugar, 3 tbs sake, 2 tbs honey,a bit of grated ginger,1 clove of garlic grated, and come to boil and stir well and put them to simmer to thicken the sauce. When sauce got slightly thicken turn off the heat.
** If you bought a ginger more than you would use for cooking, you can always freeze them. Peel them, and store in the freezer and grate them as needed. I personally like microplane grater to grate ginger,garlic etc.
** With this particular sauce, I used Microplane Ribbon grater.The ginger/garlic is shredded very very thin as opposed to finely grated.
** I think that this sauce is also good to drizzle over skillet fish,scallop,chicken,and beef steak. For meat like Turkey,Lamb etc; meat with distinct unique flavor,this sauce would not be a match.
<How to make Double Pork Asian BBQ Fried Rice>
1. Cut the 3 strips of center cut bacon to small strips
2. Cut Pork tenderloin to about 1/4" , and pound the pork tenderloin piece to thin with meat mallet and rough chop to bite size pieces.
3. Sprinkle Morton's Natures Season to Pork tenderloin pieces
4. To 12" skillet,add a bit of extra virgin olive oil,and add strips of bacon pieces
5. When bacon is about half way cooked, add pork tenderloin pieces and stir
6. When pork is about 80% cooked through, add 1 capful of sake to the skillet and let the sake evaporate,and stir the meat and bacon
** "capful" means amount of sake that can hold in the cap of sake bottle
7. Add diced vegetable of your choice to the skillet
** I used diced Valida onion (Valida onion is meaty and sweet and perfect for this recipe), and red/green pepper
8. When Onion is transparent in color, add cooked rice.
** If you do not have time to cook the rice beforehand,you can go to Chinese takeout place and get cooked rice
** My choice of rice is Kokuho Rose Rice.This rice is stickier than Jasmine rice and much closer in texture to the Japanese rice I am familiar with
** I sometimes get asked on rice cooker.My personal favorite is Zojirushi brand rice cooker. Mine can keep the rice warmer, can cook rice with your preferred texture (softer,crunchier etc), and it has energy save button on them. Rice cooker is great tool if you cook rice often.
9. Breaking up the rice in the skillet and stir to mix well with other ingredients in the skillet
10. When rice got broken up nicely and vegetable is cooked through,meat is cooked through, add the ginger garlic sauce over the skillet and mix well. Add a little by little and adjust the seasoning.
11. Drizzle about 1 tbs or so of Soy Yay's Hoisin Garlic Asian glaze over the skillet and mix well and serve.
** To pop the color, you can sprinkle chopped green onion over the dish too
