Asian cooking: Zesty Beef short ribs
When I come over to the states, I was exposed to so many different kinds of cheese,meat, fresh produce, herbs and spices, as well as wide variety of flavors with different kinds of cuisine.
Not only flavors, ingredients but also I have experienced and learned new cooking method here in the states.
One of the cooking methods I learned here was slow-cooking method by using the crockpot.
In Japan, simmering meat and vegetable in soy sauce based sauce on the stove top is common cooking method, but I do not think my mother had simmering pot on stove top for hours or I do not think we had crackpot alike in our house back home.
However,I remember my mother used pressure cooker a lot especially to cook fish like mackerel in soy sauce based sauce. Pressure cooker makes fish bone very soft,enough to break the bone with your finger, and it makes the fish bone edible.
Crockpot was very new to me,but I like it a lot.
I often use the crockpot to cook the soaked dry beans and,it makes tender,creamy beans. Its taste is superior than the beans from a can. Not only that, canned beans are high in salt, and if you cook the bean on your own,you can adjust sodium. Plus, dry beans are quite cheap and, you will be paying less this way for the same amount of beans you get from a can.
I also use the crockpot to make BBQ ribs. It makes very tender,flavorful ribs and, I really like them.
I see that many people have busy schedule and,not much time to spend in the kitchen, but crockpot is one way you do not have to spend much time in the kitchen, and they do not require constant attention like other cooking method. Also, no matter how many servings you would make, cooking time would not change and you do not have to running around the kitchen to serve everyone on time.
Best part of crockpot recipe is that,it is quite simple and easy to make for everyone.
Recently,I made Zesty Asian Beef short ribs with the crockpot. I usually use the oven to cook the ribs,but I wanted to experiment with crockpot method.
As a result, it turned out great,and my husband loved it and, became one of the repeat recipes. So, I thought I would share it with you.

Zesty Asian Beef short ribs...
** You would want about 1 lb of bone-in Beef short ribs per serving.
1. Make marinade
Mix following ingredients in the bowl and stir and pour them into a freezer bag.
* Rough chopped one stalk of green onion (cut off the root)
* 6 cloves of garlic grated
* 1/2C soy sauce
* 1/2C dark brown sugar
* 1/2 tsp sambal
What is sambal?
** Bellow is a picture of Sambal (Indonesian style chili paste). I like Huy Fong brand with green cap.

2. Take out the Beef short ribs from the package and put them into the freezer bag you have poured the marinade to. After closing the freezer bag zipper,hold the bag upside down,flip over, massaging etc and make sure ribs are to be marinaded well.
3. Marinade the short ribs for 4 hours...
4. Prepare the crockpot on counter top, and take out the drained beef short ribs and place them on the bottom of the crockpot.
5. Pour water enough to cover the short ribs,and add a few diagonally thinly sliced ginger about 2"-3" long one in the crockpot.
6. Set the crockpot to "HIGH" and cook for 5 hours
** Do not open lids often.Leave it alone.Keeping the lid on make the food moist,and every time you open the lid, it looses the steam and also the temperature would drops.
** If you do not have crockpot, you could use the Le creuset (enameled cast iron cookware) and use the oven to cook the ribs. Crockpot temperature "HIGH" is said to be around 300F with oven. So, you could preheat the oven at about 300F-325F and check the ribs and adjust the cooking time as you go.
7. While ribs are cooking, keep the marinade in the fridge,and when ribs are done, pour the marinade into a sauce pan, bring it to the boiling point, and add about 4.5 tbs water to the marinade,and lower the heat to simmer and taste the sauce
8. If it taste ok, add 1/2 tsp sesame oil to the sauce,stir and set the sauce aside
9. Plate ribs on the plate (Take the bone off for easy eating), pour sauce from the sauce pan over, grind the sesame seed over the ribs, and sprinkle chopped green onion and done
Enjoy!
If you made more than you want, you can shred the ribs and add the sauce to the shredded beef ribs and make the beef rib sandwich.
You can also freeze the leftover beef ribs and use them in the fried rice recipe.
