People food for thought Part XXI;Eggs Part II
In the previous entry titled "People food for though Part X;Eggs", I wrote about how you read the egg carton label, about Brown eggs vs White eggs,Caged chicken vs Free Range chicken.
Here, I would like to write more about nutritious food "Eggs".
When you go to grocery stores, you will see whole range of chicken eggs; Brown egg,White egg,Cage free egg,Organic egg, egg with more Omega3.... other than simple sizing choice.
How do you make your decision as to which eggs you would purchase?
With common sense, what they eat would effects on the egg's nutrition, so chickens on the good diet lays more nutritious eggs,which we can get benefit from.
By now, you know the difference between Caged chicken and Free Range chicken from the previous entry, but do you know what organic eggs are?
What are organic eggs?
In the previous entry titled "People food for thought Part XVI;Organic food", I wrote that USDA define the term "Organic" as following.
Organic meat,poultry,eggs,diary products come from animals that are given no antibiotic or growth hormone. Organic food is produced without using most conventional pesticide;fertilizer made with synthetic ingredients or sewage sludge;bioengineering; or ionizing radiation.
According to USDA website, before organic products are shipped to stores, certified inspectors would visit the farmers to make sure they are following all the rules and regulation to be able to offer as "organic food", also, farmers must be certified to produce organic food for the public.
That being said, according to Nutrition Diva website article written by Monica Reinagel, organic eggs come from chicken that are given organic feed that has not being treated with pesticide,and that has not had antibiotics or hormones in their life.
However, quality of eggs are determined by their diet; giving them access to pastures so they can eat grass and insects.
She writes that egg being organic does not necessarily means chicken has access to pasture. Also, cage free chicken has access to the pasture to eat grass and insects but they may not go out to the pasture.
If the chicken had access to pasture and ate grass and insects,that diet would improve the amount of Beta carotene (Plant base Vitamin A),Vitamin D,Vitamin E, and Omega 3 fatty acids in the eggs.
Especially not many food can provide Vitamin D (Other than eggs, good source of Vitamin D include oily fish such as mackerel,Beef liver,and sun light),and eating eggs that can provide us more Vitamin D amount will be beneficial to us.
Now, if chicken may, may not go out to the pasture to eat grass and insects, how do we get better nutrition eggs?
One solution Monica writes is to fortifies the chicken feed to be sure the eggs they lay would be better nutrition even if chicken has decided to stay in the chicken house even though they had access to the pasture.
Eggland's Best brand's Eggs have higher Omega3 Fatty Acids.Do you know how they can achieve that? It is because chicken feed has flaxseed in it and, flaxseed is high in Omega 3 fatty acids.
If you have dogs, eggs are nutritious food for them too.
With dogs, providing food that can give them omega 3 fatty acids via diet is beneficial but, flaxseed is not good source of omega 3 for them because they have to convert the omega 3 form ALA to EPA and DHA.
Flaxseed has Alpha-linolenic Acid, ALA. They need to be converted to EPA and DHA, the form of omega 3 their body uses.
If we wanted to give omega3 fatty acids to our dog via meal,we rather should use fish body oil;fish oil has EPA,DHA which dogs can easily use in the body.
Or, provide omega 3 fatty acids rich food such as oily fish; sardines,mackerel,herrings,and salmon and if you could provide grass-fed meat, since grass-fed meat is also high in omega3 fatty acids compared to conventional meat and less omega6 fatty acids, it is beneficial to them.
Some people buy egg white to cook, some people feed their dogs egg white only from fear of biotin deficiency.
However, when you think about it, all those good nutritious part is in the yolk,not egg white.Egg white is primarily protein source.
What is biotin?
Biotin is one of the Vitamin B in the Egg yolk.
According to Incredible edible egg website, biotin is involved in cell metabolism,and utilization of fats,protein,and carbohydrate.
What is Avidin?
Avidin is one of the protein compound found in the egg white,and it can bind with biotin.
Theory behind the all the myth about biotin deficiency and feeding their dogs only egg white is that, since "Biotin" can bind with egg white protein "Avidin", it makes biotin unavailable for our body to use them.
However, to reach to that level for biotin to be inhibited by avidin, for human, you must consume 24 raw egg white "a day".
That is a lot of egg whites to consume in a day.
Avidin can get inactivated by heat and, not going to bind with biotin if you eat cooked eggs.
Therefore,when you cook eggs or feed eggs to your dogs, don't toss the nutritious part of the egg;Egg yolks.
